Carrot Cupcakes for Joey

It seems I have never shared my recipe for carrot cupcakes here, which is odd since they're my favorite cake (except in the fall and then it's pumpkin). Technically Carvel ice cream cake is my favorite and what I like to eat on my June birthday every year, but since it doesn't actually contain any cake- carrot cake is the fave. I made these for my friend Joey because he is also a fellow carrot cake lover. Here is the carrot cupcake:



Recipe
Carrot Cupcakes (recipe from Grandma):

2c flour
2t baking soda
1/4t salt
2t cinnamon
1/8t nutmeg
1 1/2c sugar
1 (8oz) carton sour cream
1/2c vegetable oil
4 eggs, lightly beaten
2t vanilla
2 1/2c shredded carrot
1c walnuts (optional)

Preheat to 325F. In a medium bowl, sift together flour, baking soda, cinnamon, and nutmeg. In a large bowl, combine sugar, sour cream, oil, eggs, and vanilla. Add flour mixture to oil mixture and stir until blended. Stir in carrot and walnuts. Fill liners 3/4 full. bake for 15 minutes. cool completely. Frost with cream cheese frosting.
