Day 8 of the 12 Days of Cupcakes: Eggnog Cupcakes

After having a horrible experience with an eggnog cupcake from a local cupcakery, I wanted to find a recipe for delicious eggnog cupcakes. While I can't say that eggnog is my favorite holiday flavor, it's definitely a traditional taste of the season. This cupcake is super light and airy with a hint of nutmeg to really get the eggnog flavor and texture going. Here are the pics:




Recipe:
Eggnog Cupcakes (original from Bakingdom)

Cupcakes:
4 lg eggs
1/2c eggnog
2t vanilla
1 3/4c cake flour
1 1/2c sugar
2t baking powder
3/4t salt
1/2t nutmeg
2 sticks butter, softened

Frosting:
5 egg whites
1c sugar
1/2t nutmeg
1/4t salt
4 sticks butter, softened
1T eggnog
1t vanilla

Cupcakes:
Preheat to 325F. In a medium bowl, whisk together eggs, eggnog, and vanilla. In a large bowl, mix together flour, sugar, baking powder, salt, and nutmeg. Add the butter 1T at a time. Add half of the eggs mixture and mix on low until just combined. Increase speed and beat until light and fluffy. Reduce mixer speed and add remaining egg mixture. Mix until thoroughly combined. Fill cupcake liners 3/4 full and bake for 15 minutes. Cool completely.

Frosting:
In a medium bowl over a pot of simmering water, combine egg whites, sugar, nutmeg, and salt. Heat the mixture until it reached 160F and the sugar is dissolved. Pour the mixture into a large bowl and whisk until stiff peaks form. Add butter, 1T at a time and beat until well incorporated. Continue to beat until thick and smooth. Mix in eggnog and vanilla until fully incorporated. Frost cooled cupcakes.
