


Recipe:
Cookies N Cream Cupcakes
Cupcakes:
Oreo cookies, halved for the bottom of the cupcake liners
2 1/4c flour
1t baking powder
1/2t salt
1 stick butter, softened
1 2/3c sugar
3 lg egg whites
2t vanilla
1c milk
More Oreo cookie pieces-chopped (about 1c)
Frosting:
1 (8oz) pkg cream cheese, softened
1/2 stick butter, softened
1t vanilla
powdered sugar
Cupcakes:
Preheat oven to 325F. Place Oreo cookie halves in the bottoms of the cupcake liners. In a medium bowl, sift together flour, baking powder, and salt. In a large bowl, beat together butter and sugar until light and fluffy. Add egg whites one at a time, mixing after each addition. Mix in the vanilla. Alternate adding the flour mixture and the milk, beginning and ending with the flour. Stir in chopped Oreos. fill liners 3/4 full and bake for 15 minutes. Cool completely.
Frosting:
Beat together cream cheese and butter. Mix in vanilla. Add powdered sugar until desired consistency is achieved. Frost cooled cupcakes.
